Method
- Combine the dry ingredients. In a large mixing bowl, thoroughly combine the baking soda, citric acid, milk powder, SLSA, and cream of tartar. Break up any clumps and mix until uniform.
- Melt the cocoa butter. Gently melt the cocoa butter. Avoid overheating.
- Prepare the liquid phase. Add the sweet almond oil, Polysorbate 80, fragrance oil, and desired colorant to the melted cocoa butter. Mix well.
- Combine wet and dry phases. Slowly add the liquid mixture to the dry ingredients while mixing continuously. Work the mixture thoroughly until it is evenly incorporated and develops a scoopable, dough-like consistency.
- Form the scoops. Scoop with an ice cream scoop or cookie scoop and place on parchment or a lined tray.
- Allow to harden. Leave the scoops uncovered in a dry area until firm, typically 24–48 hours, depending on humidity and scoop size.
- Package. Once completely firm and dry, package in moisture-resistant containers or bags.
Bubble Scoop Formulation Notes
SLSA is a very fine airborne powder, so avoid creating dust while mixing and use appropriate respiratory protection when handling it.
Humidity can affect the texture and drying time of bubble scoops. If the mixture feels unusually soft, give it a few minutes to cool before adding more dry material; the cocoa butter will begin to firm as it cools.
- To scale the formula: Multiply each percentage by your desired total batch weight.
